The most common issue with beets is that people don't know how to use them, or hate that they stain their fingers. Life hack: Use reusable gloves when handling beets, and problem solved! You can also put a cloth or paper towel down on your cutting board, if you want to ensure that it doesn't get stained either! The rest is easy. You can roast them in the oven, or boil, or steam them. Then when they're done, simply use a paper towel to rub off the skins and cut as desired.
